Arabica flourishes at high altitudes, usually being grown over 2,000 feet above sea level and representing 70% of the world’s coffee exports. These highly-regarded beans are generally considered to be better quality, more flavorful and aromatic, and contain approximately half the caffeine of the Robusta. These beans are grown at altitudes under 2,000 feet above sea level, are hardier and more resistant to disease, produce higher yields and are generally an easier plant to grow.

Once the beans are picked, processed, and dried, the critical roasting begins. This is where the flavours and aroma of the coffee are developed, and it is one of the key components that contribute to a quality cup of coffee. Coffee roasting is a true art.

Lighter roasts – which result in a light brown colour – are preferred for milder varieties. There will be little to no oil on the surface of these beans as they aren’t roasted long enough to achieve that. Medium roasts, on the other hand, will be a medium brown colour with a stronger flavour and again – no oil on the surface of the bean. This roast is sometimes referred to as an American roast since it tends to be preferred in the US. And lastly, the dark roast produces shiny black beans with an oily surface and distinguishable bitterness. These roasts include French, Vienna, Espresso, Italian and more.
